I personally don't bother with Rufus. I just do this. select disk # clean create partition primary format fs=fat32 quick active assign list volume exit Then copy the ISO files to the thumb drive. It's option two here, http://www.eightforums.com/tutorials/15458-uefi-bootable-usb-flash-drive-create-windows.html. I've had no problems doing UEFI installs with thumb drives created this way. Is this an actual RAID array or just drives connected to a RAID controller? If its actually a RAID array that may add a wrinkle to installing to it, driver issue maybe. Where did you obtain your install media? You can get Windows 8 here, Create installation media for Windows 8.1 - Windows Help Are you having the same issues with Windows 8 and Windows 10?
