As you have gone this far, you should make an image of 8 and store the image on an external drive. It is better to use a free 3rd party tool.
I use Aomei Backupper mostly, I also have paragon, which is very good, but macrium and others will also be fine. You will be able to restore that image any time in future.
I think Superfly may be right about the secure boot thing. You probably can install 7 ( you will need a license to activate it ) . Worth a go. You will have the image of 8, anyway.
If you are using aomei, select system backup, the others have something similar also

No, stick with what we have.. we can try a dual boot with Windows 7 later.
Better to have an image after you have done all the updates. Then whatever os you are using, make a new up to date image every now and then. Any major problems, the image goes back on in a few minutes.
I think just about everybody here makes an image at least once a month.
