Isn't Camera Roll just a Folder, used to store pictures in, import pictures to? I deleted it from my Win8.1 as I don't need it. If you mean to change the yellow Folder icon there's small programs available on the 'net for customizing but can't suggest any as haven't used them in many years.

Well now, that's a bit rude.

If your camera application is working properly and like digital cameras each succeeding picture taken by it should get a new number, next in line.
