Create bootable USB win8, UEFI or BIOS?

So I want to create a bootable USB for win8 x64. I'v got the ISO.

Do I need to follow this:

or this?:

My motherboard is:
Gigabyte Z68X-UD3H-B3 (v1.3) and I have updated the BIOS to the latest version (U1L) which says to be a UEFI BIOS; GIGABYTE - Moederbord - Socket 1155 - GA-Z68X-UD3H-B3 (rev. 1.3)

But I dont quiet understand because what I thought was that UEFI is an alternative/replacement for BIOS. So how can you have a UEFI BIOS?
