Earth is interesting...
Hey back In windows 7, When I plugged in a pair of headphones the sound automatically changed to the what it was last time I plugged them in.

And when I unplugged them, the sound switched back to speakers...

In windows 8 (not pro version) when I plug in headphones, the sound doesn't go back to 8/100 like I set it last time I plugged them in. It will stay at 100/100 or whatever the speakers were set at.

Also when I unplug them, the sound will not change back to the speaker level, it'll stay down at whatever it was at.

I thought it'd be alright, but now it's getting really annoying.

Every time i plug the headphones in, I have to put the sound down to not blow out my ears. And when I unplug, I have to put sound up...

Anyone know why this is so? I can't recall if my old Windows 8 Pro had the auto sound change or not.

I've never seen that, but if you had it before its a function of the sound driver or possibly any add-on sound application (e.g. the Beats Audio). Beats Audio is not the actual sound device, its just a HP add on to the sound similar to what Creative does with the SoundBlaster Audigy MB software enhancements.

I am running Windows 8 Pro, and am only using the Windows provided drivers and when I plug in headphones it does go back to its previous headphone audio setting, so it is either the fact that you are not running pro (which seems like an odd thing to be excluded from the non-pro) or that there is a setting some where that will allow you to change that. I looked through the sound settings but did not find anything.

You could try uninstalling the audio driver and running Windows update to get the Windows provided drivers...you may lose some functionality however...
