I thought we could snap a window to the left or right with an adjustable width? I have no option for it.

i THINK has to do with monitor resolution ,but not too sure on that .
i think it has to be a certain resolution or higher .

if you talk about normal desktop software afaik it works same way as windows 7.
if you talk about modern ui (aka metro) appz
then you need sceen resolution to be at least 1366 x 768 or more.
and AFAIK you can not adjust width.. and you can have one app as small side bar and other in most of your screen.
if your sceen resolution is ok then just drag app beside other and it will snap to the side (in this case desktop is considered as app).. there will be seperator that you can resize but as i said before only two settings small or large no custom width resize.
you can see two options with weather and music appz in images attached

I didn't used to have the Snap Left / Snap Right option, but now I do. Not sure what I changed.

You might try going into Metro, pulling up the left menu like your screen shot shows (sorry, don't remember the correct term), and dragging one of the Metro apps around (left or right 1/4 of screen) to see if it will do it. Unfortunately, I only get about 1/4 screen options, left or right. I can't split 50/50 if I want.
