According to the Tutorial, I SHOULD have been able to install Win8 Pro x64 retail onto a Seagate 3TB hard drive. The ASUS P8Z77-V Deluxe mobo has UEFI BIOS on it and recognizes the drive as being 3TB in size.
When I went to install onto the 3TB partition tho, Win8 barfed ans said that it could not install on a GPT partition. When trying to create a 3TB simple volume or MBR partition, the 2TB partition showed up again.
Any ideas?

And if so, is the partition you're booting FROM on the USB stick also formatted FAT? You can *only* boot to a DVD or FAT-formatted USB stick (locally - network is another story) to install in native UEFI mode. If you boot any other way, your install will be in BIOS mode, which would explain what you're seeing.

Oooh. Nice pickup. Yes, indeedy, that was on a USB stick. I choose the USB stick from the BIOS mode. Ah, now I see why I sometimes see the DVD ROM drive has EFI in front of it...

Indeed - you can only install UEFI if you use a supported method. DVD, FAT32 USB key, or a specific network boot (not the usual WDS or TFTP boot rom, either). DVD is the easiest, as getting a Windows image on a FAT32 key isn't easy (and doing USB key hot-potato in the USB port doesn't work on some machines).
