If you unplug the Windows 7 drive while installing Windows 8, one won't be linked to the other, and it will make it easier if you decide to ditch one or the other. They will be totally independent of each other and you can use you BIOS's quick boot menu to select which one you want to boot to. I suspect that is how Bassfisher6522 has his setup.
If you leave the Windows 7 drive connected Windows 8 will setup a dual boot for you. The draw back is if you delete windows 7, 8 may not be bootable, they will share the boot loader. Also if you ditch 8, it will still show up in the boot menu unless you edit it out.
