I have absolutely no bloody idea...
how do I see where and what my graphics memory is going towards?

GPU-Z Video card GPU Information Utility

You don't have to choose to install it, you can just let it run in 'standalone' mode instead. Next, click on the Sensors tab and look at where it says 'Memory Usage (Dynamic)'.

is it paranoia if they really are out to get you?

that said it gave me motivation enough to load up avast and malware bytes finally.
