What am I doing wrong trying to use a bootable USB drive?

I have an Acer Aspire laptop, it's just over 4 years old. I have made a bootable Windows 10 USB flash drive. My aim is to dual boot it with the existing W.8.1 However, I'm not having any luck booting from it. I have read several websites regarding booting & setting a priority in BIOS for the USB device. I went into BIOS & in the 'Boot' section & moved the USB to the top position. I had trouble originally upgrading to W.10, (several of the default apps were missing), so I used the facility to go back to W.8.1.
