How do I determine where applications will be saved?

I built a new computer, and now have both a SSD and HDD setup. My intention was to have the SSD be only for Windows and use the HDD for everything else. I feel like that everything I download is going to the SDD and I am not getting any prompts for where to install applications.

For example, I just installed Office and was planning to install it on the HDD. I checked the SSD, and sure enough, there is a folder for Office. On a related note, the install setup everything for Office including OneDrive for Business. I don't need OneDrive for Business. Should there have been a prompt to select what Office applications I wanted to install?

You certainly can chose what parts of Office to install. You just pick custom and then don't pick what you don't want.

You can't choose where it is installed but it is only about 4GB anyways for the whole lot and much less if you don't install Access which seems to be quite hungry.

It's best to install programs on the SSD for faster performance.
Many people move the USER files (pictures, videos, music, documents) to a HD.
Those files are what can use a lot of space and don't benefit as much from the speed of a SSD.
With a 256 GB SSD you should have no problems installing programs on the SSD.
Games can use a lot of space - are you a Gamer?
You can save downloads to the HD.

Here is a tutorial by Brink about moving User files:

Some people move the User Folder, and some people use Libraries.

I'll be installing some games. Right now, all I have is Windows and Office on the SSD along with the install of Chrome. I'll take a look at moving there user folder.

I have Win 8.1 x64 + 26 programs installed on the [C] drive, OS installed apx. 6 months ago.
It uses apx. 20 GB of space

I have Win 7 x64 + 98 programs installed on the [C] drive, OS installed apx. 5 years ago.
It uses apx. 40 GB of space.

I store User Data (hundreds of GBs) on different HDs/Partitions using Libraries.

From what I've read, Games can use a lot of space ...
I've read some Gamers install their "favorite/most used" games on the SSD, and the rest on a spinner HD.
    I'm not a Gamer, so I can't speak from experience ...

Most of the programs/games installed on other than BOOT drive install critical files on BOOT drive so there is no too much of difference in their speed.
