CTRL+Z (Undo) history/log command? How to revert

So, after decades of using Windows I've just discovered the single most destructive command... The CTRL+Z... Yup, that's right.

So here's the problem. I always leave my computer on 24/7, and today I was in a application trying to undo something, but I didn't notice the application was out of focus and I was in fact "undoing" several actions I've made in the last days... Absolute disaster - I accidentally deleted Gigabytes of information and I've no way of getting them back... The worst part is, I don't even know for certain what I've deleted, as I don't exactly recall what I did in the last few days.

My question is, is there a history/log of the undo actions? I've already checked Event Viewer and there is nothing there.

In most Windows applications, the Undo command is activated by pressing the Ctrl+Z or Alt+Backspace keybindings. In virtually all Macintosh applications, the Undo command is activated by pressing Command-Z. The common command for Redo on Microsoft Windows systems is Ctrl+Y or Ctrl+Shift+Z. The common command for Redo on Apple Macintosh systems is Command-Shift-Z.

Maybe open whatever you had open & try the Ctrl+Y or Ctrl+Shift+Z ???

I've already tried those commands with no avail :(

Basically I was using Multisim, a Spice simulator and wanted to undo several steps, but I didn't notice the window was out of focus and started undoing Windows Explorer actions instead. The result was the loss of several gigabytes of information.

I wanted to know if there is a log of the undo shortcut somewhere, and if't possible for the undo command to bypass the Recycle bin.
