Has anyone had experience (good or bad) using applications such as EasyList Standard, EasyPrivacy or Enhanced Privacy with Internet Explorer 11?

I'm running Windows 8.1 on a Lenovo K450 desktop.

You mentioned IE11. Right there that brings out a lot of opinions about it and add-ons. I would use Firefox with those add-ons, vs. IE. IE of course you can just go into a Private mode, and not have to worry about the Easy & Enhanced Privacy.
