    Wordpad is in Windows Accessories:

You can store them anywhere you want to.

Or you could Google for a freeware one.

I'd say OneNote - Which is saved in Skydrive so you have access to it everywhere. Its not a full Word style txt editor, but yo may be able to use it for some kinds of letters. There is also Evernote and Googol Docs, I use Googol Docs a lot.

Try using the search in the charm bar or "SHOW ALL APPS" in the Metro UI

    You're welcome.
Try installing Classic Shell to get a Start button on the Desktop.

This will add it to your right click context menu

Accessories Desktop Context Menu - Create in Windows 8

Or you could just do the steps below.
Could try these these toolbars also by right clicking on your taskbar

Hover over Toolbars & select New toolbar ...

    copy/paste %ProgramData%\Microsoft\Windows\Start Menu\Programs then click Select folder

    copy/paste %ProgramData%\Microsoft\Windows\Start Menu\Programs\Windows Accessories

I have the next 2 pinned to Start screen & Taskbar but primarily use All apps because the tiles are smaller & alphabetical order.

If you want to return to Start screen from desktop with mouse this tutorial will set you up
"Start" Screen Shortcut - Create in Windows 8 and you'll even get to choose this icon for your taskbar

One more to life easier "All Apps" Shortcut - Create in Windows 8 takes you to the All apps screen without right clicking the Start screen then clicking lower right corner.
