SSD RAID 0 - on asus p7p55d

With Win 8 arriving I'm thinking about getting an SSD for the OS. Actually I'm thinking about getting 2 and configuring them in RAID 0.

I was quite impressed with this article where they get nearly double the performance out of putting two 120GB SSDs in RAID 0 - Corsair Force Series GT 120GB SSD review - Storage - HEXUS.net

Considering 2 x 120GB SSDs are only about £20 more expensive than 1 x 240GB SSD it seems like a good idea.

I have an asus p7p55d motherboard. It supports RAID. It has SATA 2 so the full performance boost won't arrive until I upgrade the core of my system in a year or so.

I have never configured a RAID setup before so I've been reading the p7p55d manual. And it says in section 4.5.3 - Setting RAID item in BIOS - "Due to chipset limitation, when set any SATA ports to RAID mode, all SATA ports run at RAID mode together"

I only want to have the two SSDs that will be for the OS in RAID 0. My other drive that has all my work files and media I just want to have as a single drive? Can I have that when I have RAID turned on? Could I just put this drive in a RAID set by it's self? Or would I have to format it and loose all of my files?
