Cool cake that my wife made for a friend's 4 year old boy

    She did a fantastic job it looks yummy, it can't be easy having to make a cake with no eggs and dairy but she certainly triumphed.

    Thanks everyone! My wife is a special education teacher (that's why we've been together for 27 years) and she loves to cook and bake! She inherited this trait from her parents and her sister enjoys cooking and baling, too. The rest of us just enjoy!!

    Here's the recipe::

    “Wacky” Chocolate Cake
    (Can be mixed in the baking pan!)

    1 ½ cups unbleached, all-purpose flour
    1 cup sugar
    3 tablespoons unsweetened cocoa
    1 teaspoon baking soda
    ½ teaspoon salt
    1 teaspoon vanilla
    1 teaspoon vinegar
    5 tablespoons vegetable oil
    1 cup cold water

    In an 8x8 baking dish (or large mixing bowl), sift the dry ingredients together. Make 3 wells in the flour mixture. Put vanilla in one, vinegar in another and the oil in the third. Pour cold water over the mixture and stir until moistened. Pour mixture (if using the bowl) into an 8x8 pan. Bake at 350 degrees for 25-30 minutes or until it springs back when touched lightly. Cool cake and sprinkle top with powdered sugar or your favorite frosting.

    *** This recipe is easily doubled to fit a 13x9 pan. Same baking temperature and time. Recommend mixing in the bowl for this size.

    My wife is a special ed teacher but she loves to cook and bake. When she has a day off, she typically spends it in the kitchen. She made two more cakes last weekend and she's baking another "theme cake" for a friend's kid in a week or so...
