Well, thanks for the replies, all... I wish I would have got these last night as I did some experimenting and decided to do a "Windows Refresh" to see if that would bring the Metro back... bad move.
Everything had gone great with my upgrade until I tried to fix this one small problem with the IE. The "Refresh" did fix the Metro IE, but I then had more problems than I could deal with... missing drivers, missing programs, all kinds of stuff. So I threw in the towel and did a fresh install today.
Anyway, I'm back on a fresh install... using the Metro IE now... thanks again for all the responses, and I feel silly knowing that it was such a simple solution. I would not recommend using the "Windows Refresh" unless it is a last ditch effort to fix something. It caused a lot of problems on my end.
