I always feel sketch with windows updates, i don't know why really?

I feel like it's going to slow down my computer but who knows.

Are these important & should I install them? I'm clearly never using INTERNET EXPLORER so i'm not updating it.

But are these important to update?

Updates, specifically Service Pack 3 , was putting a XP to his knees , but on 7 I never notice degradation of speed from updates, so I guess it will be the same with 8

In a word - yes!
The large update is in effect SP1 for Win8 - released even before general availability! - which addresses some performance issues and bugs.
The reason that XP updates tended to slow things down a little (or a lot) was that early XP machines tended to be under-specified for RAM - 128MS was never a realistic minimum RAM level, and once things started getting loaded, 256MB was a true minimum - once SP2 was added to the mix, with the massive changes that made to the system, the realistic minimum was 512MB.

Most modern machines come with 2GB RAM or more - which is perfectly adequate for general use (surfing, watching movies etc), although 4GB is better, even on a 32-bit system.

Yes, you should install those.

There is only flash player for IE -might as well install that also as there was a security flaw with the last one.
