Macrium Reflect Free
The Standard version has a boot time recovery environment.
I use it.
Works good.
Format the USB as NTFS for 1 big image file.

If by that, you mean large enough to hold the image backup, a safe presumption is larger than the combination of the boot partition and OS partition that contain Win8. MR typically gets around 50% compression when you choose the "high" option, so this would generally give you enough room to store two images.

I have two 1TB external HDs with several images from three computers. I'm using Acronis True Image. I heard good things about Macrium [and many other free & fee backup/restore programs], so choose...and continue making backups.

I recommend Paragon Backup & Restore or Paragon Hard Disk Manager (which I've got). My experience with Paragon HD Manager has been very positive.

I use easeus todo backup all the time. The free version always works for me.

The easiest is free Macrium. Paragon and Acronis are also good but more complex. AOMEI Backupper is another option, but in 32bit it was buggy for me.
I use free Macrium since years and never had a problem to recover. It also has a lot of nice options. Here is a tutorial I made. 345 thousand people have already used it and I really never had any complaints.
