Hibernate/Sleep Issue Windows 8.1

Just got a new desktop with Windows 8.1 installed. Was originally having some issues getting the computer to go into hibernate and read online to try disabling some of the homegroup settings since I'm not even connected to a homegroup.
Now, no matter what I do, the computer hibernates between 2-3 minutes after going to sleep. When I say sleep, I mean I can move the mouse to wake the computer up and at least one of the fans is still running. About two minutes later (if I leave the computer asleep), the fan will shut off, I can hear it power down, and I have to hit the power button to turn the computer back on, which takes me back to the screen I left it on (the same as sleep).
I have tried going into advanced power options and completely disabling hibernate, changed the hibernate time to much longer, turned off hybrid sleep, changed how long it takes the computer to sleep, restored to default power settings - nothing seems to work, it always hibernates 2-3 minutes later.
I do want the computer to hibernate eventually, but not 2 minutes after going to sleep. I would like it to do something like sleep after 20 minutes and hibernate 20 minutes after that. I have also noticed if I manually go up to power, right click and choose Sleep, it shuts all the fans off and requires the power button to be pressed to turn on like it's "hibernating." Does anyone have any ideas? This is extremely frustrating.

Not sure if this will help or not, I opened a cmd.exe and typed "powercfg.exe -h off" This completely removed the hibernate option from the Power Options, however the computer is still doing the same things described above.
