When you stop using a program it goes to "suspended" mode and won't use any resources, it's dormant until you click again to use it.
You can choose to use either desktop IE or metro UI IE, whichever you prefer.

Reason: additional info
i know that ....but is this the right way to do it ?
There isn't a "right way" to do it as of yet.
Only way to kill/exit them is to use task manager, otherwise like was said, they go into suspended mode in the background. MS doesn't want you to kill them off, they want them to go into suspended mode to be easily brought back up when called.
To get back to using the Chrome-less Metro style IE10, just go back to the start menu and to the Metro style desktop view to get to the IE10 Metro tile.
If you're in the old regular desktop, it will only have an icon for the regular IE.
