Change printer default setting to grayscale?

In previous versions of windows, I was able to customize the printer settings so that it always printed in grayscale, unless specifically changed at the time of the print job. I see how to access the control and can navigate to Customize Your Printer under Printer Management, but the option to change the default printer settings to grayscale or black and white is nowhere to be found?
Please help, I am beyond frustrated at this point and my children are killing me with the ink usage and I want to cry out of frustration.

Hi Karen11011,

First of all, what is your printer make/model number? That would certainly be a big help. However, before you respond, try this route:

Open Devices and Printers, right click the Printer in question, select printing preferences, and look around in that area to see if you have that option available. Unfortunately, I have a black and white printer so I cannot show you exactly where that might be.

Thank you for the response and you're right - definitely should have included the printer info! It is an Epson Stylus NX420.

When I click on printer preferences the window that pops up has a single tab - Layout, where I can choose portrait or landscape. At the bottom left there is an advanced button, but all that leads to is a window that allows me to choose the paper size and copy count.

And I guess it is important to add that when I follow the same steps on my windows 7 laptop, I am offered a completely different window that allows me change the color defaults, among other things. How do I get to this window in windows 8??

Ok, thanks for that. So, my guess is that you are not running on the latest driver and may be using a default driver that was somehow auto applied via either the Win 8 installation and/or an optional Windows Update because those options should be there:
