Mail app customization?

Nope. The creaters of the Windows 8 store apps were useless and unfortunately done a pretty terrible job of them.

You can set notifications in the Calendar app, but if you're away from your computer you'll miss them. With Office Outlook the reminder box will stay on screen so when you get back to your computer you'll see it, or if the computer is switched off it will come up as soon as you open Outlook. So, with the Mail app I think your best bet would be to set both notifications and email alerts so that if you miss the notification, you will still see the email reminder.

But, the useless Calendar app won't let you do this, therefore you'll have to use the Outlook.com to do it (the Outlook.com website is more useable than the built-in Windows apps). Once added to Outlook.com, it will then sync with the desktop apps. Note: The Outlook.com website will also let you set more advanced reminders such as every 2 weeks, every 6 months, every 2 years, etc. which the calendar app won't let you do.
