While working I mostly use Chrome. Even so the fullscreen IE metro appp is quite appealing and its nice to wander sometimes while using it.So there is no other way of keeping it as app too without seting IE as default browser.
And on a side note: That Browser choice shoulnt dissapear once Ive made my decision?

for the way Windows 8 is set up now, you can only get the Modern version of the browser by setting it as the default, whether it's IE or Firefox or Chrome. otherwise, you have the desktop version.

Not much different other than the Metro version is optimized for touch, and has built-in flash with no other plugins allowed.

Chrome, in any mode, not optimized for touch at all. in fact, it has zero touch and I don't even know why they even bothered making a Windows 8 mode as it has zero touch features. Modern IE10 is fantastic for touch. Firefox Nightly has poor touch but at least they're trying and it follows the Modern motif while still trying to have classic features. even the regular releases of Firefox have touch features (though many of them are slow and almost unusable).
